Eight Minute Cheesecake
Recently some of our favorite customers came by the shop and brought us a beautiful cheesecake made especially for us....topped with strawberries and blueberries, it was not only delicious but looked like it had taken a long
time to make....I love cheesecake but am chronically short on time for making things like cheesecakes....if you find yourself in the same time crunch, here's a great recipe for cheesecake that you can make in 8 minutes according to the recipe card in my wife's recipe file...I don't know where the recipe came from and I'm certainly not claiming ownership of this but I can tell you it is delicious and perfect as a dessert on a hot, muggy evening. You mix it up, pour in a pie crust and refrigerate...don't even have to turn on the oven....give it a try....surely you've got 8 minutes to spare....you're going to need an electric mixer for this one so hope that's not a deal breaker...
8 Minute Cheesecake
1 package of cream cheese
1/3 cup sugar
1 cup sour cream
2 teaspoons vanilla
1 - 8 oz Kool Whip
Graham cracker pie crust
Set the cream cheese on the counter and let it warm up about an hour before
you get started....then cut it into chunks, put in your mixer bowl and beat
at medium until cream cheese is smooth...gradually add sugar and beat at
medium until blended in to cream cheese...then blend in sour cream and
vanilla and then fold in Kool Whip until everything well blended.....that's
it....spoon into pie crust and put in refrigerator and chill until
set.....about 4 hours.....hope you like it....and let me know if you have
