Ahhh...the chile pequin - or bird pepper - is one of my absolute favorites. My dad used to have a plant in the backyard and they were my intro to fiery foods. TSS uses this beauty to put a new twist on Cajun Seasoning. Go ahead and toss that Tony Chachere's in the garbage. You won't be needing that anymore.
